The effect of grain size (fraction) on physicochemical indicators

Abstract

This article investigates the effect of different size fractions of wheat grain on its physicochemical indicators. The study analyzed such indicators as grain size, 1000-kernel weight, test weight, moisture content, vitreousness, protein content, gluten content, and ash content. It was observed that as grain size increased, there was a corresponding increase in the 1000-kernel weight, test weight, vitreousness, and in some cases, the protein and gluten content. Conversely, the smaller fractions were noted to have a relatively higher moisture content and an increased ash content. The results indicate that fractionating wheat grain by size prior to processing is crucial for forming a raw material mass with stable physicochemical properties.
