Abstract

This article examines the scientific and practical effectiveness of modern packaging technologies in preserving the quality and extending the shelf life of soft cheeses (Brinza, Labne, and Adigey) that have high moisture content and are prone to microbiological degradation. During the study, the impact of traditional packaging methods on microbiological, physicochemical, and organoleptic indicators was analyzed, and the effectiveness of using modified atmosphere packaging (MAP) and multilayer PET/PE/EVOH films with high barrier properties as alternatives was evaluated.
